The carob tree, ceratonia siliqua, is a native evergreen of the Mediterranean area. It bears pods resembling beans; it is also known as the “locust bean”. It is widely believed, though it cannot be certain, that when John the Baptist wandered in the desert eating “locusts and honey”, the locusts were not insects, but the sweet pulpy pods of the carob tree.
